Is it possible to trim 1/2" to 3/4" length off a 7" probe tip without affecting operation of the thermocouple?

You cannot trim the probe once made without damaging it. You could possibly use a bushing on the tread end to raise the probe a little if it is too long for your Thermowell.

If ordering an NB1-CASS-14U-12-SL, is the actual probe length 11.5" (including 0.5" of NPT thread insertion)?

That is correct the probe from tip to 0.5" up the NPT threads is 12".
