If I buy a "High Temp Low Drift Thermocouple Probes with Lead Wire", would Universal connector and clamp will be also included?

You will get the probe with lead wire and stripped ends as no connector is included and would need to be ordered separately.

It only mentions the maximum temperature. What is the lowest temperature it can measure? Can it measure -40 C? Thanks.

This probe can measure down to cryogenic (down to -196 deg C), so will be fine at -40 deg C. Please note that the Accuracy Specs only apply to 0 deg C and above, in accordance to ANSI standards for Special Limits of Error thermocouples.
