In the heading, this says that it can measure up to 380C, however in the description, it says that the max temp is 45C. Which is correct?

Thank you for your inquiry. Measurement Range: -25 to 380°C (-13 to 716°F). Operating Temperature: -10 to 45°C (14 to 113°F).

Suitable to do screening over aluminum or stainless steel surfaces (polished-like), like molds and pipes?

The Emissivity is settable down to 0.1 which is usually adequate for highly reflective surfaces so it should be good for this measurement.
