How do I connect thermocouple wires like https://www.omega.com/en-us/temperature-measurement/temperature-wire-and-cable/thermocouple-wires/sppl/p/SP10R-005 to this and if I were to cut this cord open how could I connect it to the thermocouple wires?
The question is not clear of what you are proposing to do. If you want to add a connector to SP10R-005 you should use a connector like the SMPW-R/S-M to connect to the screw terminals. You can use standard lead wire like EXTT-RS-20 to make extensions as well.
