This is the probe - and then what do I need to connect this to a datalogger?

What gauge is the thermocouple wire itself? Does it vary based on probe diameter (e.g. for the 1/16" diameter)?

Yes wire gauge of the probe is determined by the probe diameter. For this spec please refer to spec page for "XL-K-MO". You will find wire gauge vs probe diameter there.

Are these available in custom lengths over 24"?
Thank you for your inquiry. Yes they are but you have to create the probe on the Configurator by clicking the Configure Now button on the product page.
